Green Apples and Celery with Mustard Vinaigrette
serves 4
Ingredients
- 3 T lemon juice
- 3 T Dijon mustard
- 2 T honey
- 1 1/2 t olive oil
- 1 cl garlic, minced
- 3 ea Granny Smith apples, peeled and sliced
- 6 stlks celery, thinly sliced
- 1/4 C parsley, chopped
- 3 T walnuts, toasted and chopped
Instructions
- Whisk together the lemon juice, mustard, honey, olive oil, and garlic in a large bowl. Season to taste with salt and pepper.
- Add the remaining ingredients, toss, plate and serve.
